Cut off the hard base of the spinach, and chop into 4 cm (1.6 in.) lengths. Cut the bacon into 1 cm (0.4 in.) width pieces.

Heat the bacon (1) and olive oil in a fry pan, then add in the spinach and butter and saute all together.

When the color of the spinach changes, sprinkle with the soy sauce and cooking sake and saute further.
