Directions

  1. Boil the spinach in lightly salted water. Once done, remove and rinse until cold water, wring dry and cut into 3 cm (1 1/4 in.) lengths.
  2. Mix the soy sauce and soup stock together.
  3. Dress (1) with half of (2), arrange in a bowl. Pour on the rest (2), sprinkle of bonito flakes.

Greens - boiling in salt

Add salt to plenty of boiling water to achieve salt concentration of about 1 - 2%, then add in the greens from the roots. After boiling for about 20 seconds, remove into cold water.
