Cut the hard roots from the kaiware, soak in ice water, drain and shake dry.

Thinly slice the onion. Cut the radish and cucumbers into 5 mm (0.2 in.) cubes. Mince the shiso. Soak each ingredient in water, drain and shake dry.

Combine (1) and (2) in a bowl. Mix together (A), then pour on to dress the ingredients.
