Cut pork into 1 cm (0.4 in.) cubes, sprinkle with salt and pepper.

Chop the onion into 2 cm (0.8 in.) cubes and the carrot into 5 mm (0.2 in.) cubes. Trims stems and dethread the green beans, parboil and then cut into 2 cm (0.8 in.) lengths.

Heat the olive oil in a pot, cook the pork. Add in order the onions, then carrots, and saute further.

Add in (A) and the beans, simmer for about 15 minutes. To finish, add in the green beans and quickly simmer all ingredients together.

Rather that removing one stem at a time, it is much faster to lay the beans with stems facing in the same direction and then cut these off at once.
