Directions

  1. Rinse the taro and arrange into a lidded heat-safe container. Cover and microwave (600 W) both sides for 3 minutes each, or until soft enough to pierce with a toothpick. Remove and allow to cool. Peel the skin with a knife while taking care to remove any hard parts, then mash well with a potato masher or fork.
  2. Combine (A) into (1), then divide into equal portions to form balls of your desired size.
  3. In the order of flour, egg and then breadcrumbs, dip each ball into (B) then deep-fry in oil heated to 180°C (356°F) for 3 to 4 minutes.
