Directions

  1. Slice up the onion, keeping each slice width slightly thicker than usual. Chop the pork into bite-size pieces.
  2. Bring the dashi to a boil in a pot, add in the soy sauce, mirin and (1), then simmer for 5 minutes.
  3. Mix together (A), add and mix throughout, then bring to a boil to thicken.
  4. Boil the udon noodles in hot water, drain and place into a colander.
  5. Cover (4) with (3), and sprinkle on the green onions.
