Rinse off and dry the salmon fillets. Sprinkle on the salt and pepper and set aside for 5 minutes. Pat dry once again, then dust in flour and shake off any excess.

Heat the vegetable oil in a fry pan, add in and melt the butter, place (1) into the fry pan skin-side down and cook over medium to low heat. Once browned, flip over and cook the other side then remove onto plates.

Clean the fry pan and pour in (A). Bring to a quick boil, pour onto (2). Garnish with the red leaf lettuce and cherry tomatoes.
