Directions

Lightly butter and flour a cake pan (both extra).

Mix together the flour and baking powder, and sift together twice.

In a bowl, combine the brown sugar and egg, then beat with a hand mixer until white.

Add in the vegetable oil and carrots, combine well.

Mix in the walnuts, raisins, ginger juice and soy sauce.

Add (2) and quickly mix together.

Pour the mixture into the cake pan, then bake in an oven at 180 C (350 F) for 30 minutes. Remove from the cake pan and allow to cool.
